Join us as we transform the Deep Woods Estate barrel hall into a fine-dining restaurant with a difference. We’re excited to announce our participation in the inaugural Fine Vines Festival, a new hero wine festival bringing together unique events that showcase the quality and depth of the Margaret River region – which is exactly what we plan to do!
What better way to celebrate the spoils of our region than with the Fervor team, led by Paul ‘Yoda’ Iskov, and Millbrook Winery’s Guy Jeffreys and collaborate with Deep Wood Estate for an unforgettable dining experience. Think long-table dining and a menu harnessing fresh Australian ingredients, with a focus on locally sourced produce, paired perfectly to the finest Margaret River wines.
Hosted by Chief Winemaker Julian Langworthy, guests will be treated to an exclusive evening in anticipation of our annual Deep Woods Reserve release on 1 November. These truly remarkable and consistently superb wines are made from hand-selected parcels of fruit matured in the very best French oak. They are of limited production and are recognised as some of the finest wines produced in Australia.
The uniting of Yoda and Guy highlights their shared philosophy on food, regionality and sustainability. Guy’s desire to work in a restaurant that grows its own vegetables led him to Millbrook Winery where he introduced his no waste, sustainable food ethos, including growing vegetables from seeds that have been saved from the previous year’s crop – cultivating the true paddock-to-plate philosophy.
Yoda established Fervor with the aim of providing a “culinary experience you can’t get anywhere else". Fervor harnesses locally sourced native produce and shares it with diners at unique locations across WA. He has a great love and respect for the land and endeavours to portray this through his food, locations, dedication and passion.
